A summertime favorite, the caprese salad is quick to whip up, satisfying, and always a crowd-pleaser. Another benefit of this one is that two out of the four ingredients can be grown in your garden!

  • Tomato
  • Fresh Basil
  • Mozzarella (try buffalo for a new kick)
  • Olive or Balsamic oils
  • Salt and Pepper to taste

Simply layer your sliced tomato, mozzarella, and basil. Top with a drizzle of high quality balsamic oil, salt and pepper. That’s it! You’re done! Simple, satisfying, and healthy! Caprese salad is the perfect lunch or appetizer for those busy on the go days.

No-Cook Fresh Tomato Sauce

As a staple to many gardens, tomatoes seem to come in abundance over the summer months. While caprese salad is one way to use up those tomatoes, creating your own no-cook sauce is another. Be sure to check out this recipe from our friends at DeLlalo. The recipe uses several ingredients from the garden is a family pleaser every time!

  • 4 large, coarsely chopped tomatoes
  • 3 fresh garlic cloves
  • Handful of fresh basil
  • ¼ cup grated Parmigiano-Reggiano
  • ½ cup EVOO
  • 1 pound spaghetti

Place chopped tomatoes in a large serving bowl. Squeeze and smash the tomatoes to release all of the juices. Combine with olive oil, garlic, basil and salt. Set aside (up to an hour) and allow the flavors to infuse.

Cook pasta according to directions. Once drained, immediately add the hot pasta to your tomato mixture. Top with freshly grated Parmigiano-Reggiano and serve!

Prosciutto and Melon

Another quick and easy choice to serve before a meal or snack on during the day is melon wrapped in prosciutto. The saltiness of the prosciutto perfectly complements the sweetness of the cantaloupe, making it a match made in heaven. Paired with your favorite white wine, don’t say we didn’t warn you how fast the plate will go!
