Ingredients:
- 1 cup of all-purpose flour
- Salt and Pepper
- 4 boneless skinless chicken breasts
- 1 tablespoon of EVOO
- 1 tablespoon of divided butter
- 8 ounces of cremini or sliced baby bella mushrooms
- 2 minced garlic glove
- ¾ cup marsala wine
- ¾ cup chicken broth
- ½ cup of heavy cream
- Egg noodles
In a bowl, dredge chicken in flour. Over medium heat, melt 1 tablespoon of butter and oil. Add the chicken and cook until both sides are golden brown. Remove and place aside.
To make the marsala sauce, melt the remaining butter in a skillet with your mushrooms. Cook approximately 7 minutes, add garlic and salt, and continue cooking. If the mixture looks like it’s drying out, add a splash more olive oil to avoid burning. Next, add your wine, broth, and cream together while bringing it to a simmer. Return your chicken to your skillet and spoon your sauce over the chicken breasts. Continue simmering until the chicken is thoroughly cooked.
Serve over egg noodles.
